Pecorino Sardo is a sheep's cheese with Protected Designation of Origin (PDO), produced in Sardinia.
It is a semi-cooked paste, produced with whole sheep's milk from Sardinian farms, possibly thermised or pasteurized, rennet, salt and lactic ferments and is marketed in two versions: a sweet, fresher, about 1-2 months, and a mature one, more seasoned, not less than 2 months. Here the most aged one.
