Molise – Città di Termoli (Termoli town)
Region of southern Italy with capital city Campobasso, it is the youngest among Italian regions, born at the beginning of the Sixties for detachment from the ancient region of “Abruzzi and Molise” and becoming as matter of fact the twentieth Italian Region. Rich in wildlife, in WWF oasis and Lipu sites, Molise’s forests house many categories of animals, including the Apennine chamois, roe deer, deer, otters, the Marsicano brown bear and the fox. The cuisine is extremely varied, with special mention for extra virgin olive oil, and its agreeable flavour; it may be used both as dressing for salads and bruschetta. The excellence of the Extra Virgin Olive Oil quality has been strongly recognized and gained, in 2003, the DOP certification. Many towns, in fact, are part of the "Oil City", based in Larino. Noteworthy is the productive sector of pasta, thanks to the many artisan pasta makers: very famous the "cavatelli" , obtained from a dough without eggs, therefore, realized just with flour and water. Among the cheeses, the "Caciocavallo" is delicious, especially if consumed along with the many salami. Also, the use of the Truffle is known all over the region, and you can find excellent wines, like the Tintilia, a local grape variety that has gained the DOC recognition.
